This was surprisingly really good! As another commenter mentioned, it was a bit on the sweet side. I may add less brown sugar next time. I also made corn bread to go with this, and that was a nice complement.

Very nice unexpected fusion of cinnamon and cumin with the cauliflower. I used smoked chipotle chili powder. Mine came out on the sweet side so next time I'll add the maple syrup to taste rather than the recommended amount.

I used chopped tomatoes, white pepper instead of red, and a yellow bell pepper, and skipped the chili powder in favor of some smoked paprika and extra cinnamon. Just lovely. And a happy new year!

Unexpectedly delicious! Heeding other's warnings, I reduced the sugar to 1/8 cup and loved the balance of flavors. Used red bell pepper 'cuz I don't care for green, and whole cumin seed for its fuller and more nuanced flavor. Otherwise followed to the word, and just loved it!

Very good. Reduced maple syrup to 2T and cumin to 2 tsp. That was all it needed to my taste. Pureed canned plum tomatoes instead of sauce, had no bell pepper so subbed diced carrot, added diced sweet potato. Used Rancho Gordo black eyed peas cooked from scratch a couple days ago. Served with charred tortilla and diced avocado. Would make again.

I cooked this with zero sugar. I love it. It is hearty and the leftovers are great as a quick meal by itself.

Tried this out tonight with broccoli instead of cauliflower and carrots instead of green pepper, as that was all that was in the fridge. Used tomato paste in water rather than tomato sauce. It all came together beautifully and was delicious. Used maple syrup rather than brown sugar, and less than this recipe called for.

Delicious. I've had other, similar vegan recipes for black-eyed peas with a barbecue sauce, but the texture of the cauliflower takes this to the next level. I enjoyed it with cornbread. While I respect the sweetness as a legitimate component of the flavor, I'm not used to that much sugar in a main dish and will probably use less next time.

I did it with a bit less maple syrup and a bit more cayenne, plus a little ancho for smokiness. Great barbecue flavor and super satisfying with some rye toast.

Very good. I had some dried "lady cream peas" from Camellia brand, which I cooked in water. Used red bell pepper instead of green. I used minimal sugar but some tomato paste, and also Worchestershire instead of soy sauce. Also rice, since I didn't have biscuits!

Per the notes, I skipped brown sugar and didn't miss it. Used 14.5 oz can chopped tomatoes as that was what was in the pantry. Would make again.

Excellent! Substituted kabocha squash for cauliflower. Put quarters of unpeeled squash in the microwave on a dish with a float of water for 1.5 minutes, it was easier to peel/chop. Used Rancho Gordo dried peas and added all-including 1 cup more water- to the instapot for 30 min, high pressure cook. Could try 20-25 min. Like others mentioned, modified to 2 t. Cumin, omitted the sugar, and opted for 2 T. Maple syrup, & 1 T. stone ground mustard. Rich, flavorful, yum!

2-15oz cans is approximately 3 cups, if you happen to have dried beans and not those in a can…looking forward to making this tonight!

With all the great reviews and the 5 stars, I was expecting this to be a little more wow. It was good in a health-food store kind of way. A little too sweet, I'd add less sugar next time and a little more something tomato-y.

This thick stew was absolutely delicious. I love cauliflower, so I added double. Like some other commenters, I also was not amenable to that sheer quantity of brown sugar. I added just 2 Tbsp. For my diners, that was sweet enough. I would even omit sugar next time...the spicy tomato sauce is sweet enough on its own. Also, I didn't realize this recipe was vegan until after I made it. The combination of cauliflower, spice, and tomatoes really makes this dish feel meaty and satisfying!

I was confused by the 14-oz can of "tomato sauce". Does this mean diced tomatoes? Or ketchup? Or tomato paste? I could not see anything in my local supermarkets called "tomato sauce" in a can. I used a can of diced tomatoes and that seemed ok.

Tomato sauce is an American product as I’m aware. I’ve never seen it in the UK. It looks like thicker tomato passata, with “herbs and spices”. As you say I would use a can of tomatoes and reduce the water to account for the extra liquid. And amp up any flavourings in the recipe if it feels bland.

As everyone said, surprisingly really good and easy to prepare, I did 1/4 maple and thought it was perfect. I also had a small amount of Canadian bacon I wanted to use up and that certainly didn't take away from the dish, otherwise prepared as written and served with leftover rice. I am sure biscuits and whipped maple butter would have been better ;)

Can anyone tell me what the whipped maple butter referenced here is? Serve in soup bowls with biscuits and whipped maple “butter” on the side.

If you lived in or near Vermont you would know. It is a special treat made from pure maple syrup only, probably hard to find outside of the northeast, unless in a gourmet shop.

This was great and got high marks from my guests. 6 people gobbled up a double batch. I forgot to sauté the cauliflower and just threw it in with other ingredients. It cooked in normal amount of time. Cut back on sugar and served it with corn bread and tortilla chips.
